How to determine Glycemic Index
To find the GI of a food, human volunteers are given a “test food” that contains 50 grams of digestible carbohydrates.
Over the next two hours, blood samples are taken to measure the carbohydrates' effect on participants blood glucose levels.
The area under each persons blood glucose response(glucose AUC), after two hours, is also taken.
