Glycemic Index (GI)
The Glycemic Index is a ranking system, that ranks carbohydrates based on their effect on blood glucose levels.
It compares carbohydrates in foods, giving a numerical index of post-meal glycemia.
Carbohydrates that break down fast, during digestion, have high glycemic indexes. Carbohydrates like these require less energy to be converted to glucose, which result in fast digestion and a quick increase of blood glucose.
