How to determine Glycemic Index
At a different time, the same volunteers are given a “control food” or “reference food” (pure glucose or white bread) that contains the same amount of carbs as the test food.
After two hours their blood glucose response is measured.
A glycemic index value is calculated by dividing the AUC(area of curve) of the “test food” by the AUC of the “reference food”.
